Because of the CCGC Greens Workshop, I don't know what the week will bring, but I need to bottle the Traminer-Riesling, and probably stabilize the Malbec. Anything else can sort of float. I don't think you can allow a wine to settle too long.

Racking & Clearing:
WinExpert Vintners Reserve Merlot (Michele) - Racked, SG - 0.995 Looks pretty clear - moved to counter. ABV - 13.5%

Stabilizing:
RJS Grand Cru Malbec (Betsy & Mollie) - SG - lowered to 0.992 so we stabilized. and left in fermenting room. expected ABV 13.0%
Secondary Fermentation:
Master Vintner Limited Edition 2016: Jolie Sauvignon Blanc. (Michele & Angie) - GG = 1.010 so we racked to a carboys for secondary fermentation.
Primary Fermentation:
RJS Grand Cru Special Cabernet Franc Dessert Wine - (Michele) - Stabilization right after the primary fermentation for 14 days, so we just left it alone - didn't even take a SG.
Start Primary Fermentation:
RJS Grand Cru Speciality Vanilla Fig Dessert Wine - (Michele) Christmas in a glass! Dark berry and dried fruit aromas complemented by baking spices and vanilla bean. Very complex on the palate with dried fruit, vanilla flavours and spice notes coming through on the finish. SG - 1.130
WinExpert Selection California Viognier - (Mollie and Betsy) The intense fruitiness of this beguiling wine suggests rich sweetness, but it shows a surprisingly dry and aromatic finish. A delicate yellow colour, tinged with the variety's typical 'green-gold' hue, it bursts out of the glass with apricot, peach and spice aromas. As it matures, it can also display hints of jasmine, honeysuckle, kiwi, mint, orange blossom and even mango! While higher in alcohol than many white wines, it drinks well young nonetheless. Lower acidity makes it friendly to a wide range of foods, but it's 'soft but strong' character makes it excellent for sipping alone. SG 1.094
